Even the picky eaters will want to give this oozy-gooey appetizer a try, so don’t be surprised when it becomes an instant holiday classic!

Roasted Pumpkin-Apple Soup

Pumpkin season is quickly coming to a close, but if you’re as obsessed with this squash as we are, then there’s still plenty of time to work it into your healthy Christmas dinner! This soup is velvety and rich without being too heavy, making it the perfect first course in your holiday meal. We love this recipe from Eating Well, which is dairy-and-gluten-free, and vegetarian/vegan friendly. Bonus: it’s only about 180 calories per serving!

Coffee-Braised Pot Roast with Caramelized Onions

Pot Roast is a holiday staple, but traditional recipes tend to be sodium-filled and fatty. It doesn’t have to be that way, though – you can still have your pot roast and save your diet, too. This recipe (which includes gravy, you’re welcome) from Eating Well calls for coffee and balsamic vinegar, giving your roast a deliciously rich, tangy flavor that will be a hit at your Christmas table. The service sizes are pretty generous, too: 3 ounces of meat and 1/3 cup gravy comes in at just over 200 calories.
